Ingredients:
2 cans (5 oz each) tuna in water, drained
6 oz cooked pasta (penne, rotini, or similar)
1/2 cup diced cucumber
1/2 cup cherry tomatoes, halved
1/4 cup black olives, sliced (optional)
Dressing: 2 tablespoons olive oil, 1 tablespoon red wine vinegar, 1 teaspoon dried oregano, salt and pepper to taste.
Optional Ingredients: Diced bell peppers, feta cheese crumbles, fresh parsley or dill, a squeeze of lemon.
Preparation Instructions:
Cook pasta according to package directions. Drain and cool.
In a large bowl, combine tuna, pasta, cucumber, tomatoes, and olives (if using).
In a small bowl mix the dressing ingredients.
Pour dressing over the pasta mixture and toss gently.
Serve chilled or at room temperature.
