Ingredients:
2 cans (5oz each) tuna in water, drained.
2 cups cooked rice (preferably day-old)
1 cup frozen peas and carrots
2 tablespoons soy sauce
1 table spoon sesame oil (optional)
2 eggs (optional)
1 green onion, sliced.
salt and pepper to taste.
Optional Ingredients: Diced bell peppers, a dash of sriracha or hot sauce, a drizzle of hoisin sauce, a sprinkle of sesame seeds.
Preparation Instructions:
If using eggs, scramble them in a large skillet or wok, and remove from the pan.
In the same pan, heat sesame oil (if using) and add frozen peas and carrots. Cook until tender.
Add cooked rice, tuna, and soy sauce. Stir well.
Add cooked egg back to the pan, and stir to combine.
Season with salt and pepper.
Garnish with green onion before serving.
