Ingredients:
1 pound large shrimp, peeled and deveined
1 bell pepper (any color), sliced
1/2 onion, sliced
2 tablespoons olive oil
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon paprika
Salt and pepper to taste 1
8 flour tortillas
Optional Ingredients: Lime wedges, salsa, guacamole, sour cream, shredded cheese.
Preparation Instructions:
In a bowl, toss shrimp with 1 tablespoon olive oil, chili powder, cumin, paprika, salt, and pepper.
Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat.
Add bell peppers and onion to the skillet and cook until tender-crisp, about 5-7 minutes.
Add shrimp to the skillet and cook until pink and opaque, about 2-3 minutes.
Warm tortillas according to package directions.
