Utensils Required: Large skillet, cutting board, knife.

Ingredients:

  • 1 pound large shrimp, peeled and deveined

  • 1 bell pepper (any color), sliced

  • 1/2 onion, sliced

  • 2 tablespoons olive oil

  • 1 tablespoon chili powder

  • 1 teaspoon cumin

  • 1/2 teaspoon paprika

  • Salt and pepper to taste 1

  • 8 flour tortillas

  • Optional Ingredients: Lime wedges, salsa, guacamole, sour cream, shredded cheese.

Preparation Instructions:

  1. In a bowl, toss shrimp with 1 tablespoon olive oil, chili powder, cumin, paprika, salt, and pepper.

  2. Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat.

  3. Add bell peppers and onion to the skillet and cook until tender-crisp, about 5-7 minutes.

  4. Add shrimp to the skillet and cook until pink and opaque, about 2-3 minutes.

  5. Warm tortillas according to package directions.

  6. Serve shrimp and vegetables with warm tortillas and your desired toppings.
