Ground Beef Picadillo Stuffed Peppers

Ingredients:

  • 1 pound ground beef

  • 1/2 cup diced onion

  • 1/4 cup diced bell pepper

  • 1/4 cup diced tomato

  • 1/4 cup raisins

  • 1/4 cup sliced green olives

  • 1 tablespoon chili powder

  • 1/2 teaspoon ground cumin

  • Salt and pepper to taste

  • 2 large bell peppers (any color), halved lengthwise, seeds removed

  • Optional Ingredients: Shredded cheese, cilantro, hot sauce.

Preparation Instructions:

  1. Preheat oven to 375°F (190°C).

  2. In a large skillet, brown ground beef over medium-high heat. Drain any excess grease.

  3. Add onion, bell pepper, and tomato to the skillet and cook until softened, about 5-7 minutes.

  4. Stir in raisins, green olives, chili powder, cumin, salt, and pepper. Cook for another 5 minutes.

  5. Stuff the ground beef mixture into the bell pepper halves.

  6. Place stuffed peppers in a baking dish and bake for 20-25 minutes, or until the peppers are tender.

  7. Serve hot, topped with shredded cheese and cilantro, if desired.
