Ingredients:
1 pound ground beef
1/2 cup diced onion
1/4 cup diced bell pepper
1/4 cup diced tomato
1/4 cup raisins
1/4 cup sliced green olives
1 tablespoon chili powder
1/2 teaspoon ground cumin
Salt and pepper to taste
2 large bell peppers (any color), halved lengthwise, seeds removed
Optional Ingredients: Shredded cheese, cilantro, hot sauce.
Preparation Instructions:
Preheat oven to 375°F (190°C).
In a large skillet, brown ground beef over medium-high heat. Drain any excess grease.
Add onion, bell pepper, and tomato to the skillet and cook until softened, about 5-7 minutes.
Stir in raisins, green olives, chili powder, cumin, salt, and pepper. Cook for another 5 minutes.
Stuff the ground beef mixture into the bell pepper halves.
Place stuffed peppers in a baking dish and bake for 20-25 minutes, or until the peppers are tender.
Serve hot, topped with shredded cheese and cilantro, if desired.
