Pork Carnitas Bowls

Flavorful and tender pork carnitas served in a bowl with your favorite toppings. Carnitas, or "little meats," are traditionally slow-cooked, but this recipe offers a quicker version that still delivers delicious results.

Utensils Required: Large skillet, two forks, cutting board, knife, rice cooker (optional).
Ingredients:
1 pound boneless pork shoulder, cut into 1-inch cubes
1 orange, juiced
1 lime, juiced
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
Salt and pepper to taste
2 cups cooked rice
Toppings: shredded lettuce, pico de gallo, guacamole
Optional Ingredients: Black beans, corn, sour cream, pickled onions, hot sauce.
Preparation Instructions:
In a large skillet, combine pork, orange juice, lime juice, oregano, cumin, chili powder, salt, and pepper.
Bring to a simmer, then cover and cook for 20-25 minutes, or until pork is tender and easily shredded.
Uncover and cook for another 5-10 minutes, allowing the liquid to evaporate and the pork to brown slightly. Shred the pork with two forks.
Assemble bowls: divide rice between two bowls. Top with pork carnitas, lettuce, and pico de gallo. Serve immediately.
