Ingredients:

  • 4 large flour tortillas

  • 1/2 cup cooked chorizo, crumbled

  • 1 can (15 oz) black beans, rinsed and drained

  • 1 cup shredded Monterey Jack cheese

  • 1/4 cup diced red onion

  • 1 tablespoon chopped cilantro

  • Optional Ingredients: Diced bell peppers, salsa, guacamole, sour cream, jalapeños.

Preparation Instructions:

  1. In a skillet, cook chorizo until browned. Drain any excess grease.

  2. In a bowl, combine chorizo, black beans, red onion, and cilantro.

  3. Lay out two tortillas. Sprinkle half the cheese on each tortilla.

  4. Top with the chorizo mixture, then the remaining cheese.

  5. Top with the remaining two tortillas.

  6. Cook in a dry skillet over medium heat for 2-3 minutes per side, or until golden brown and the cheese is melted.

  7. Cut into wedges and serve immediately.
