Ingredients:

  • 1 pound ground beef

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 can (28 oz) diced tomatoes, undrained

  • 1 can (15 oz) kidney beans, rinsed and drained

  • 2 tablespoons chili powder

  • 1 teaspoon cumin

  • Salt and pepper to taste

  • 1 box cornbread mix

  • Optional Ingredients: Diced bell peppers, jalapeños, shredded cheese, sour cream.

Preparation Instructions:

  1. In a large pot, brown ground beef over medium-high heat. Drain any excess grease.

  2. Add onion and garlic to the pot and cook until softened, about 5-7 minutes.

  3. Add diced tomatoes, kidney beans, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 15-20 minutes.

  4. Prepare cornbread according to package directions.

  5. Bake cornbread according to package directions.

  6. Serve chili with a slice of cornbread.
