Ingredients:
1 pound ground beef
1 onion, chopped
2 cloves garlic, minced
1 can (28 oz) diced tomatoes, undrained
1 can (15 oz) kidney beans, rinsed and drained
2 tablespoons chili powder
1 teaspoon cumin
Salt and pepper to taste
1 box cornbread mix
Optional Ingredients: Diced bell peppers, jalapeños, shredded cheese, sour cream.
Preparation Instructions:
In a large pot, brown ground beef over medium-high heat. Drain any excess grease.
Add onion and garlic to the pot and cook until softened, about 5-7 minutes.
Add diced tomatoes, kidney beans, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 15-20 minutes.
Prepare cornbread according to package directions.
Bake cornbread according to package directions.
Serve chili with a slice of cornbread.
