Sausage and Bell Pepper Ragu with Polenta

Ingredients:

  • 1 pound Italian sausage (sweet or spicy), casings removed

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 can (28 oz) crushed tomatoes

  • 1 teaspoon dried oregano

  • 1/2 teaspoon red pepper flakes (optional)

  • Salt and pepper to taste

  • 4 cups cooked polenta

  • Optional Ingredients: Mushrooms, fresh basil, grated Pecorino Romano cheese.

Preparation Instructions:

  4. Prepare polenta according to package directions.
