Sausage and Bell Pepper Ragu with Polenta

Ingredients:
1 pound Italian sausage (sweet or spicy), casings removed
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, chopped
2 cloves garlic, minced
1 can (28 oz) crushed tomatoes
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
Salt and pepper to taste
4 cups cooked polenta
Optional Ingredients: Mushrooms, fresh basil, grated Pecorino Romano cheese.
Preparation Instructions:
In a large skillet, cook sausage over medium heat, breaking it up with a spoon, until browned. Drain any excess grease.
Add bell peppers and onion to the skillet and cook until softened, about 5-7 minutes.
Add garlic, crushed tomatoes, oregano, red pepper flakes (if using), salt, and pepper. Bring to a simmer and cook for 15-20 minutes, or until sauce thickens.
Prepare polenta according to package directions.
Serve ragu over polenta.
