Ingredients:

  • 8 large pasta shells

  • 10 oz frozen spinach, thawed and squeezed dry

  • 1 cup ricotta cheese

  • 1/2 cup grated Parmesan cheese

  • 1 egg, lightly beaten

  • 1/4 teaspoon nutmeg

  • Salt and pepper to taste

  • 1 jar (24 oz) marinara sauce

  • Optional Ingredients: Mozzarella cheese, fresh basil, Italian seasoning.

Preparation Instructions:

  1. Cook pasta shells according to package directions. Drain and set aside.

  2. In a mixing bowl, combine spinach, ricotta cheese, Parmesan cheese, egg, nutmeg, salt, and pepper.

  3. Stuff each pasta shell with the ricotta mixture.

  4. Pour half of the marinara sauce into a baking dish.

  5. Arrange stuffed shells in the baking dish.

  6. Pour remaining marinara sauce over the shells.

  7. Bake at 375°F (190°C) for 20-25 minutes, or until bubbly and heated through.
