Ingredients:
8 large pasta shells
10 oz frozen spinach, thawed and squeezed dry
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 egg, lightly beaten
1/4 teaspoon nutmeg
Salt and pepper to taste
1 jar (24 oz) marinara sauce
Optional Ingredients: Mozzarella cheese, fresh basil, Italian seasoning.
Preparation Instructions:
Cook pasta shells according to package directions. Drain and set aside.
In a mixing bowl, combine spinach, ricotta cheese, Parmesan cheese, egg, nutmeg, salt, and pepper.
Stuff each pasta shell with the ricotta mixture.
Pour half of the marinara sauce into a baking dish.
Arrange stuffed shells in the baking dish.
Pour remaining marinara sauce over the shells.
Bake at 375°F (190°C) for 20-25 minutes, or until bubbly and heated through.
